What’s on the Menu Monday!

I have wanted to make a ham since Christmas, but since it’s just Mike, Haley, my Father in Law, and me, I did not want to make a ginormous 7+ pound ham. Last Christmas there were like 9 of us and we didn’t even eat the whole thing. But I really wanted to make a ham. Then one of my neighbors told me I can buy a much smaller ham, like 3 pounds. Whoa, who knew? Well I didn’t and I was thrilled. So I got one at Hy-Vee, 2.5 lbs for $6.99. This is the recipe I used. Since I didn’t have a 7 lb ham, I changed the serving size to 7 and used those measurements. I used crushed pinapple instead of rings because, well, that’s what I had. Also, I felt it was cooking way too slowly so I upped the temp to 400. I use a meat thermometer, so I don’t know how long I cooked it, but I read somewhere 15 mins per pound. Since it’s already cooked and technically you’re just warming it up you don’t have to worry about under cooked meat. The last 5 degrees I put the oven on broil and it was Awesome! My husband, who keeps telling me he doesn’t like ham but who enjoys it whenever I make it, loved it. Definitely going to make this again.
